The Best Greek Potatoes Ever

Serving: 4

Crispy on the outside, tender on the inside, these Greek potatoes are roasted with olive oil, lemon, garlic, and herbs for bold Mediterranean flavor. An easy, crowd-pleasing side dish you’ll make on repeat.

Ingredients:

  • 4 Yukon Gold Potatoes (peeled and diced)

  • 1/4 cup Olive Oil

  • 1 Medium Lemon (juice)

  • 1/4 cup Chicken Bone Broth (or use vegetable broth)

  • 1 Tbsp Oregano

  • 3-4 Cloves Garlic (crushed)

  • 2 Cloves (optional)

  • 0.5 tsp Salt

Directions:

1. Preheat oven to 400 degrees F (205 degrees C).

2. Peel and wash potatoes, and cut larger chunks. Put into a large mixing bowl.

3. In a small bowl, mix the olive oil, salt, lemon juice, cloves, garlic, broth, and oregano. Add to the bowl with the potatoes, and coat evenly.

4. Pour potatoes and mixture into a casserole dish. Cover with foil and bake potatoes for 25 minutes. Then mix potatoes again, replace the foil, and cook for another 20 minutes.

5. Take foil off, mix again, and then cook for another 20-30 minutes until most of the"sauce" is absorbed, and potatoes look crisp on the outside.
